Things other than cooking do happen in my kitchen. Namely cleaning. I don’t love cleaning like some do. I don’t find it therapeutic or freeing. Instead, I get everything cleaned and then mess it up again. Such clean counters and everything put away just makes me want to get out 10 ingredients and spill some flour by the sink or soy sauce near the fridge and then leave a few sugar granules on the stove and then turn on the tea kettle to the smell of burned sugar. I guess I don’t really want all of those things to happen, but they do. I just understood why my cat never fails to drop a big one in the litter box within 90 seconds of me cleaning it. Glad we are on the same page now.

Why “Saltimbocca”?
Saltimbocca means to "jump in the mouth" in Italian, alluding the fact that a dish leaps into your mouth because it's so good. I will strive for this, and hopefully each recipe that I post will fall somewhere nearer “saltimbocca” on the scale, rather than “ripugnante.”
